Mango & Lime Colada
When making this cocktail, the key is buying frozen mango chunks for the creamy smoothie-like texture and using a good quality spiced rum (cough cough... Duppy Share!).
Makes 4 cocktails
- 200ml spiced rum
- 250g frozen mango chunks
- 4 limes
- 200ml coconut milk (alternatively, coconut water works really well!)
- 120ml condensed milk (adjust to taste if you like it sweeter)
- Ice and fresh mango slices to serve
- Optional glass rim: 2 tablespoons desiccated coconut + 1 tablespoon light brown sugar
Juice 4 limes
Combine the lime juice with all other ingredients in a blender and blend until smooth
For the optional glass rim, add the coconut and sugar to a small shallow plate and mix. Glide a wedge of lime through the edges of the serving glasses, turn each glass upside down into the sugar and coconut mix, rotating until it fully sticks to the rim.
Add ice to each glass and pour the cocktail, finishing with some fresh mango sticks and lime wedges if desired.
