These heavenly shell-on prawns with a sweet and herby red pepper sauce are so practical to prepare and a real treat! Lots of garlic, lemon and coriander are the key to making this even more special.
Ingredients
- 10-12 king prawns, clean and shell on
- 2 sweet pointed red peppers
- 4 red chillies
- 2 lemons
- 4 cloves garlic
- 1 generous bunch of coriander
- 1 tablespoon salted butter
- Olive oil
- Salt and pepper to taste
Method
Pre-heat the over to 210C / 190C Fan
Clean the prawns - we like to use a pair of scissors to cut the shells vertically in the middle on both sides, making them easier to both clean and peel after cooked
Finely slice the garlic and slice the sweet red peppers to a medium thickness
Drizzle the prawns, shell on, with a generous glug of olive oil, juice of one lemon, salt and pepper to taste
Add the garlic to the prawns and mix with your hands to evenly coat them in the juices
Heat a cast iron pan or oven-proof skillet over medium heat, add a drizzle of olive oil and the sweet red peppers, forming a bed
Add the chilli peppers whole and the other lemon sliced vertically in quarters
Top with the prawns and pour the leftover juices on top
Transfer the pan to the oven and cook for c. 15 mins or until the prawns have fully turned pink
Remove from the oven, stir in the butter and finely chopped coriander
Tip: Serve with fresh crusty bread to mop up the delicious sauce.
