Aligotte! 2020 displays a bouquet of stone fruits, citrus complementedby white flower - we have orchard pear, candied orange zestboth on the nose and palate - the aromas are coming throughalong with subtle sweet spices and herbs such as thyme.
The finish is superb with a long mouth-watering salinity- powerful flinty minerality! Sharp and crisp.Aligotte! 2020 will complement perfectly oysters, dauphinoise
potatoes, creamy stews, and strong or milder cheeses.

LOCATION & TERROIR
Aligotte! 2020 is the second vintage of the remarkable BourgogneAligoté’s made for Déjà Bu Wines by Sylvain Pataille. This unique andexclusive wine is made from 70% of grapes sourced in Échevronne in
a vineyard located above the Corton Charlemagne appellation. And30% of grapes which comes from Marsannay village in Côte de Nuits.
Both terroirs are gravel soils. The Hautes Côtes geology characteristicsbeautifully suit the Aligoté grape variety, not having any clay inthe soil structure - a mountain-like terroir low in nutrients.
Both vineyards have an average age of 40 years old and are biodynamicallyand organically cultivated since 2009 (Marsannay) and 2013 (Échevronne).
The fruit, handpicked in September 2020, was perfect. The stunningmaturity, fruit concentration and acidity level in the grapesinvited us for a precise but low-intervention vinification.
After pressing the grapes on the same morning they were handpicked,the fermentation and 10 months of aging took place in 40 and 80 hectolitres old oak foudres - The foudres are brilliant winemaking tool
to let the wine maturing at its own pace - tasting the wine at differenttime of the year, it evolves, breathes, shapes its personality slowlyand precisely. We love the use of old oak foudres for Aligotte!In addition to the blend, 10% of final pressing (jus de presse) of Marsannay’s grapes which was aged for one year in newoak 228l barrels was added before assembling.
