Delicious notes of raspberry and pear both on nose and palate. It is lively, fun, and unique - this would be the perfect sparkling rosé wine foran aperitif, with pudding such as panna cotta, Eton Mess, cheesecake,strawberry tart, or as an afternoon refreshment. It could be used to makecocktails, or served at a brunch as well as at a wedding lunch.

LOCATION & TERROIR
The Domaine goes back to the 17th century, passing from generation togeneration ever since. Stéphane and Carine Sérol have run it since 1996, with 35ha of vineyards all certified organic (since 2011) and biodynamic(since 2020) all planted in high density - 8 000 to 10 000 vines per hectare.Here, it is all about altitude (400 to 550m), granitic terroir and the uniqueGamay St Romain grape variety! We tend to associate Gamay withBeaujolais, but here, in Côte Roannaise, it does incredibly well.
The Gamay St Romain grapes used to make Cabochard 2020 come from young vines aged between 5 and 15 years old.The grape bunch has berries which are more loosely spaced out thanthe Gamay grown in Beaujolais. It tends to develop more millerandage,producing berries that differ greatly in size including very smallberries with fewer seeds, which means lower yields than the Gamayin Beaujolais, and producing very interesting and lush wine.
Once hand-picked, they are brought to the winery where they are directly gently pressed, keeping the maceration light to minimize the extraction of both colourand tannin. The wine is then made by Ancestral Method which consists of bottlingbefore the fermentation is completed. Carbon dioxide is therefore produced bythe grapes’ natural sugars. The wine is disgorged, and the wine level topped up.
The amazing natural acidity of the wine keeps the perception ofsugar very low. This sparkling wine is beautifully made- light, crisp, refreshing, finely bubbly, and low alcohol.
